The Grand Cru Les Preuses bottling by Domaine William Fevre comes from a 2-hectare plot of Chardonnay vines in the Grand Cru Les Preuses vineyard, situated on the north-western slope of the Cote des Grand Crus. The clay inflected chalk soil of the vineyard typically yields a wine with great fruit intensity, at times characterised as the least ‘stony’ of the Chablis Grand Cru appellations. The William Fevre cuvée is a fruit-forward wine, with notes of pear, peach and orange peel on the nose and depth and fullness on the palate.

The Fevre holdings in the Grand Cru Les Preuses vineyard are farmed sustainably and organically. The fruit is hand-picked and meticulously sorted at the winery prior to fermentation in stainless steel vats and neutral French oak barrels. Care is taken to preserve the naturally bold fruit expression that is the signature of the Les Preuses terroir, and thus most of the subsequent élevage is conducted in tank rather than in wood. The result is a rich and tense wine, boasting a core of ripe fruits and honey notes, supported by vibrant acidity that should see it mature comfortably for over a decade.
