This cuvée by William Fevre comes from a 4-hectare plot of Chardonnay vines in the famous Grand Cru vineyard of Les Clos, situated on the hillside above the village of Chablis. The soil here is quintessentially Chablis – deep Kimmeridgian marl of chalk and limestone that lends distinct minerality and signature spiciness to the wines. The William Fevre Les Clos rendition is a classic showcase of the terroir each vintage, with great fruit purity and sophistication and structure that will reward long-term cellaring.

The domaine’s extensive holdings across the length and width of the vineyard mean that with careful blending a cumulative and accurate expression of the appellation can be created each vintage. The vines are farmed sustainably with a focus on organic methods, and most of the viticultural work is conducted manually. After hand-harvesting, the grapes are pressed and the juice fermented in a combination of stainless steel vats and oak barrels (approximately 70% wood). The wine then undergoes élevage for 16 to 18 months, with full malolactic fermentation and regular lees-stirring. The result is perhaps the most consistent expression of Les Clos to be found in Chablis, capable of cellaring well for several decades.
