The Grand Cru Bougros Cote Bouguerots by William Fevre is sourced from a 2.1-hectare plot of Chardonnay vines in the Chablis Grand Cru Bougros vineyard. The vines are planted in a distinct lieu-dit known as the Cote Bouguerots, characterised by a much steeper gradient and chalkier soils than the rest of the Bougros vineyard. The vines benefit from good sun exposure and excellent drainage, promoting phenolic ripeness and complexity in the grapes. The wine has a broad mouthfeel that is a hallmark of Fevre.

The vines for the Cote Bouguerots cuvée are farmed sustainably with organic methods. The fruit is hand-picked into small crates to avoid crushing the berries prematurely, and after intensive hand sorting the grapes are pressed into steel tanks for juice settling. Fermentation occurs partly in neutral French oak barrels (approximately 60% of the total volume) with the remainder fermented in stainless steel tanks. After six months of barrel élevage, the wine is then racked to tank where maturation is completed anti-oxidatively to retain as much fruit character as possible. The result is a creamy, mouth-filling and ripe expression of Grand Cru Chablis, a perfect accompaniment to a range of fine foods and capable of cellaring well for ten years or more.
