Domaine William Fevre, Chablis Grand Cru, Bougros, Burgundy
An introduction to Domaine William Fevre, Chablis Grand Cru, Bougros, Burgundy
The Grand Cru Bougros by Domaine William Fevre is sourced from a 4.1-hectare plot (49% of the total vineyard) in the Grand Cru vineyard of Bougros, situated at the eastern end of the Cote des Grand Crus overlooking the village of Chablis. The good sun exposure of the site encourages consistent ripeness and phenolic intensity in the grapes, a vineyard signature enhanced further by the higher-than-normal clay composition of the soil. This cuvée by William Fevre offers a bouquet of ripe fruits and notes of hay, with voluptuous mouthfeel and broad texture.

Understanding Domaine William Fevre, Chablis Grand Cru, Bougros, Burgundy
Domaine William Fevre farms its vines in the Bougros Grand Cru organically and sustainably, with mostly manual viticultural practices, including hand harvesting. At the winery, the grapes are meticulously sorted to remove underripe or substandard berries prior to fermentation in both stainless steel vats and neutral French oak barrels. Following fermentation, the wine sees élevage in wood and steel (approximately half and half) before blending in steel tank for three months prior to bottling. The result shows the breadth and fullness so typical of the Bougros vineyard combined with elegance, poise and long ageing potential.
