An introduction to Domaine Billaud-Simon, Chablis Grand Cru, Vaudesir, Burgundy
Vaudésir is one of the seven Grand Cru climats in Chablis. The vineyard covers just over 16 hectares of steep land above Grenouilles Grand Cru climat, and just east of Preuses Grand Cru climat. Half of its vines face south, and the other half southwest. This topography distinguishes Vaudésir from other vineyard sites, as the steep slopes provide some protection from northerly winds while ensuring that the vines have very good exposure to sunlight. The wines produced thus tend to be softer and more elegant than other Chablis Grand Crus, with the lower proportions of limestone also helping to create wines with a refined minerality alongside fruit richness. The domaine’s vines cover a total of 0.7 hectares.

Produced from Chardonnay grapes, the wine is vinified in stainless steel tanks and aged partially in the same vessel, and partially in oak barrels. The wine’s attractive pale yellow colour shimmers with green flecks. Its diverse bouquet offers honey, vanilla, peach, acacia, lime blossom, and nutmeg. It is well-structured, supply textured and rich, yet with lively acids, precise minerals, and citrus fruit flavours that give it a distinct and satisfying tension. The wine has been scored very highly by major critics, with Willam Kelley of The Wine Advocate describing it as ‘satiny and charming’ and praising its animation, energy and long finish.
