Domaine Billaud-Simon, Chablis Grand Cru, Les Clos, Burgundy
An introduction to Domaine Billaud-Simon, Chablis Grand Cru, Les Clos, Burgundy
Les Clos is the largest and most famous Chablis Grand Cru. It measures a total of 27 hectares and covers a single, southwest-facing slope above the town of Chablis itself. Due to the southwest facing aspect that gives the vines plentiful amounts of intense afternoon sunshine, and the white, stony soil with high levels of limestone and clay overlaying Kimmeridgian Marl, Chablis Les Clos wines are generally more powerful and intense than others in the commune. However, due to the cool climate in northern Burgundy, the fruit’s ripeness does not come at the expense of Chablis’ signature racy and bracing acidity, and Les Clos wines are famous for their profound balance of weight and finesse. The domaine’s vines cover a total surface area of 0.4 hectares.

Understanding Domaine Billaud-Simon, Chablis Grand Cru, Les Clos, Burgundy
Produced from Chardonnay grapes, the wine is vinified in stainless steel tanks and aged partially in the same vessel, but partially in oak barrels. The delicate bouquet blends white fruit, confit citrus, floral honey, and fresh pastry. The satiny palate is powerful and dense, with plenty of saline minerality and vibrant acidity to provide impressive balance. According to The Wine Advocate’s Willam Kelley, this is ‘a multidimensional wine that's layered, concentrated and powerful’. The critic also admired its its ‘lively line of acidity’ and ‘precise, saline finish.’
