Blanchots is a Grand Cru climat in Chablis which is famous for its steep slope. The domaine’s east-facing vines cover a surface area of 0.18 hectares. The parcel’s terroir comprises white topsoil of Portlandian influence and Kimmeridgian rock sub-soil which encourage deep roots. The vines are exposed to early morning sunshine, and due to the steep slope, they ripen at a gentle but relatively warm rate. Billaud is of the belief that Blanchot is the most mineral-dominated cru in Chablis.

Understanding Domaine Billaud-Simon, Chablis Grand Cru, Blanchot Vieille Vigne, Burgundy
Produced from old Chardonnay vines, the wine is vinified in stainless steel tanks and aged partially in the same vessel, as well as in in oak barrels. The wood treatment is quite subtle if not invisible in this wine, which showcases algae, lemon rind, orange peel and perfumed floral aromas. The wine’s elegant and delicate nose melds fresh green apple and peach, with orange rind and acacia blossom. The medium to full-bodied mouthfeel is supported by a densely concentrated core of fruit, which extends from the age of the vines, and bright acidity to balance it out. The impressive, classically Chablis finish is abundant with salinity and chalky minerality.
