Understanding Chateau Raymond-Lafon, Sauternes, Bordeaux
The magic of Château Raymond-Lafon's wines lies in their meticulous production process. The estate practices selective hand harvesting, with workers passing through the vineyard several times to ensure only the grapes affected by noble rot at the perfect stage of development are picked. This labour-intensive approach is a testament to the château's dedication to quality over quantity. Fermentation occurs with natural yeasts in oak barrels, where the wine also ages for up to three years before bottling. This extended ageing stage in the barrel allows the wine to develop a deep complexity and a rich palette of aromas and flavours. The result is a wine that captivates with its lush sweetness, balanced by vibrant acidity, making it both a delight to enjoy young and a marvel to age. Château Raymond-Lafon displays honeyed apricot, candied citrus, toasted almond and spice in a luxuriously sweet palate underlined by a delicate oak influence. This wine has exceptional age-worthiness.
