Understanding L'Extravagant de Doisy Daene, Sauternes, Bordeaux
The grapes for Extravagant Doisy Daëne are selected from the oldest and most favourable limestone and clay plots of the Château Doisy Daëne estate. The grapes are left to ripen to perfection, often aided by the noble rot (Botrytis cinerea), which naturally concentrates their sugars and enhances the complexity of flavours. Harvesting is carried out in several rounds with the utmost precision, ensuring that only the finest grapes are chosen. The winemaking process involves a careful pressing of the grapes, followed by fermentation in oak. Ageing takes place for ten months in French oak followed by further maturation in stainless steel. Extravagant Doisy Daëne features rich candied fruit, honey, apricot, citrus zest and floral notes in an opulent palate with fresh acidity. The wine is renowned for its extraordinary ageing potential.
