Understanding Clos Saint-Martin Grand Cru Classe, Saint-Emilion Grand Cru, Bordeaux
The Clos Saint Martin vineyard is predominantly planted to Merlot alongside smaller amounts of Cabernet Franc and Cabernet Sauvignon. Grapes are hand-harvested before undergoing pre-ferment cold soak to gently extract colour and flavour and fermentation in oak. Fermentation takes place in temperature-controlled vats, with ageing conducted in a blend of new French oak barrels and large terracotta jars. This stage adds complexity while preserving the wine's natural harmony and balance. Clos Saint Martin features ripe black fruit, delicate floral notes, oak, vanilla and spice in a silky palate with refined tannins. This wine has excellent cellaring capacity when it unfurls and develops greater complexity.
