Understanding Chateau Haut-Bailly Cru Classe, Pessac-Leognan, Bordeaux
Château Haut-Bailly's terroir is exceptional, characterised by sandy-gravel soils on a subsoil of fossilised stone, which contributes to the distinctive elegance and minerality of its wines. This unique geological composition, coupled with the estate's sustainable farming practices, ensures the production of grapes of the highest quality. The winemaking process at Château Haut-Bailly is marked by precision and respect for tradition, with grapes being meticulously selected and harvested by hand. Fermentation takes place in state-of-the-art facilities designed to optimise the expression of each varietal. This is followed by ageing for 16 to 18 months in French oak with the balance of new and seasoned wood varying according to each vintage. This careful stewardship from vine to bottle results in a wine that is not only a true expression of its terroir but also possesses a remarkable capacity for ageing, evolving complexity, and depth over time. Château Haut-Bailly displays ripe red fruit, delicate floral notes and a hint of oak in an elegant palate with silky tannins. This wine has considerable cellaring capacity.
