The vineyards of Noon Winery are blessed with the region's quintessential sandy soils and warm climate, creating an ideal setting for these grape varietals. The low-yielding Grenache vines, some of the oldest in the region, contribute significantly to the depth and intensity of flavour in the wine. The winery's approach to viticulture emphasises organic practices, ensuring each grape variety expresses the true character of the vineyard. Grapes are hand-picked ensuring only the best quality fruit is used. Fermentation takes place in small open vats with manual extraction to gently tease out colour and tannins. This is followed by pressing in a traditional basket press to minimise bitterness. The wine ages in French and American oak for 18 months. Eclipse features ripe dark fruit, subtle spice and velvety tannins. This wine is a prime candidate for cellaring.
