The grapes for Mitolo Savitar Shiraz come from premium low-yielding parcels of vines in McLaren Vale, where the soil is rich and the climate is conducive to producing intensely flavoured grapes. The vineyard management practices are tailored to each vine, ensuring optimal ripeness and flavour concentration in the grapes. Fermentation of individual parcels takes place with extended skin contact to tease out depth and structure. The wines are then aged for 18 months in 100% new fine-grained French oak barrels before blending for bottling, stages which contribute to its robust structure and add layers of complexity. Mitolo Savitar Shiraz features rich, dark fruit elegantly intertwined with notes of liquorice, dark chocolate and a hint of spicy oak in a sumptuous palate with velvety tannins. This wine has excellent ageing potential.
