The Hickinbotham Vineyard, with its distinctive soil composition and aspect, creates an ideal environment for cultivating Syrah. Clarendon Hills embraces a philosophy of minimal intervention and sustainable viticulture, allowing the character of the Hickinbotham terroir to be fully expressed in the Syrah. Vines are farmed without irrigation, resulting in low to medium yields that enhance fruit concentration. Fruit is hand-harvested and sorted so only the finest grapes are vinified. Fermentation is with natural yeasts and no fining or filtration takes place before bottling to enhance terroir and vintage expression. The wine is matured in majority-new French oak over 18 months. Hickinbotham Syrah is characterised by dark berry, pepper and subtle notes of spice and earthiness in a full-bodied palate with smooth tannins. A robust structure gives this Syrah exceptional cellaring potential.
