Rooted in the ancient soils of the Barossa Valley, the Elderton Command Shiraz benefits from the region's optimal viticultural conditions. The vines, some dating back to the early 20th century, are cultivated with meticulous care, ensuring the highest quality of fruit. The age of these vines contributes significantly to the complexity and intensity of the Shiraz grapes, a hallmark of the Command label. Grapes undergo fermentation processes that include the open-top vat method for optimal temperature control, flavour and colour extraction. Softening malolactic fermentation follows ahead of 30 months of maturation in a combination of new French and American oak. These steps allow the wine to develop the deep, complex and signature style it’s famous for. Command Shiraz features dark fruit, mocha, hints of vanilla, chocolate and spice on a lush, velvety palate with well-integrated tannins. This wine has impressive cellaring potential.
