Grapes are selectively hand-picked from the finest Cabernet Sauvignon vines in the Barossa Valley. These vines thrive in the region’s unique climate and soil composition, producing grapes that are rich in flavour with an ideal balance of acidity and tannins. The age of the vines and the meticulous vineyard management practices contribute significantly to the exceptional quality of the fruit. During fermentation, the wine undergoes practices that enhance colour and tannins, the latter of which adds structure. This is followed by malolactic fermentation to promote balance. It matures in majority-new oak for 17 months, a stage that promotes complexity. Aphrodite features dark fruit, cassis and a hint of savoury spice. The palate is robust yet refined, displaying a harmonious blend of fruit richness, firm tannins and a smooth, lingering finish. While impressive in its youth, Aphrodite also shows great ageing potential, promising to develop further depth and sophistication over time.
