Understanding Two Hands, Aerope, Barossa Valley, South Australia
Aerope is sourced from exceptionally old Grenache vines, some of the oldest and most revered in the Barossa Valley. These ancient vines, deeply entrenched in the region's unique terroir, yield grapes of extraordinary character and intensity. Two Hands approach winemaking with a minimal interventionist approach for pure terroir expression. Grapes are hand-picked and undergo a rigorous selection process to ensure only the best fruit is used. Careful fermentation sees gentle techniques used to extract colour and flavour without overpowering the wine's intrinsic qualities. This is followed by 24 months in new and one-year-old French oak barrels. Only the finest wine from these barrels appears in the final blend. Aerope displays red berry, exotic spice and earthy undertones in a powerful and graceful palate with a silky texture and a backbone of fine tannins. Aerope possesses excellent ageing potential, promising to evolve and gain complexity over the years.
