The grapes for Gregor Shiraz come from premium vines in the Barossa Ranges, an area renowned for producing intensely flavoured Shiraz fruit. The vineyard's unique microclimate, characterised by warm days and cool nights, along with its ancient soils, contributes to the development of rich, concentrated flavours in the grapes. Grapes are dried on racks in the traditional method to concentrate their natural sugars and flavours before fermentation. This classic technique, rare in Australian winemaking, adds a unique dimension to the wine, enhancing its richness and complexity. The wine is then aged for 24 months in French oak, which imparts additional layers of spice and vanilla to the already complex flavour profile. Hobbs of Barossa Ranges Gregor Shiraz dark berry, hints of chocolate, coffee and exotic spice in a bold and luxurious, velvety palate balanced by firm tannins. Its intensity and depth make it an excellent candidate for cellaring.
