Alice's Shiraz is born from meticulously tended vineyards in the heart of Barossa Valley, where the unique combination of climate, soil and topography merge to create an ideal environment for growing deeply-flavoured Shiraz grapes. The wine is crafted with a philosophy that emphasises minimal intervention, allowing the natural characteristics of the Shiraz grape to shine through. Fermentation is conducted in traditional open-top fermenters, with manual extraction techniques to extract rich colour, flavours and robust tannins. The wine then matures in a mix of new and seasoned French and American oak barrels for up to 27 months, which imparts subtle complexity, enhancing its natural depth without overshadowing the intrinsic qualities of the fruit. This wine is bottled without fining or filtration to enhance vintage expression. Alice's Shiraz features dark fruit, notes of chocolate, vanilla and a touch of pepper in a luxurious palate supported by firm tannins. This wine has remarkable cellaring potential.
